THROW TOGETHER VEGGIE SOUP
Here’s my favorite recipe for a homemade “throw together” veggie soup.
INGREDINTS:
6 Cloves of Garlic
1 Onion
2 Bags of Carrots
2 Zucchini
6 Golden Potatoes - Peeled
6 Small Sweet Potatoes - Peeled
2 Bunches Celery
1 Bag of Trader Joes Soycutash (frozen corn, edamame, peas, and peppers)
2 Cans of Organic Petite Diced Tomatoes in Tomato Sauce
1 Can of Organic Tomato Sauce
5 Cups of Chicken Bone Broth (or made from home)
2 Cups of Water
1 lb Roasted on the Bone Chicken - Shred and add into soup
1 Italian Seasoning Packet
Garlic Powder to taste
Salt and Pepper to taste
Pinch of Cumin to taste
DIRECTIONS:
Begin by chopping the vegetables and shredding the roasted chicken.
In a soup pan, sauté the 6 cloves of freshly chopped garlic along with 1 chopped onion in a 1/2 cup of bone broth.
Bring mixture to a simmer and cook until the onion is soft and the garlic looks a little golden. Add the remaining ingredients and cook until the carrots are soft.
Note: You can also add beef (instead of the chicken) beans, chick peas, etc. Or, if you don’t have all of the ingredients above, just don’t add them. It’s so easy. Just add what you have. :)
Tip 1: You can use a crockpot to cook the soup in after your garlic and onion have been sautéed. Also, if i’m needing to keep my soup warm, I leave it on warm in the crockpot.
Tip 2: When possible, I recommend making this soup a day before you intend to eat it. This allows the flavors to absorb into the vegetables. Simply heat it on the stove and enjoy.
*This recipe makes a lot, but I love making soup that I can have throughout the week. :)
