SPOOKY TOMATO SOUP & GRILLED CHEESE
I’m not entirely sure how the tradition started, but each year we have a “go to” dish to help usher in all of the feels surrounding Halloween. It’s the simple Tomato Soup and Grilled Cheese. There are a bunch of different ways that you can make this dish, and we make a variation of it each year. This year we dressed up our grilled cheese a little bit and made it extra spooky.
TOMATO SOUP
2 Boxes of Trader Joes Tomato and Roasted Red Pepper Soup
GRILLED CHEESE
Sourdough Bread
Wasabi Mayo
Sharp Cheddar Cheese
Kerrygold Irish Butter
Red Onion
Roast Beef
Spicy Mustard
Salt to taste
Garlic Powder to taste
I begin by warming the boxes of tomato soup in a large soup pan, adding salt and pepper to taste.
Then I turn on my pan for the grilled cheese and let it warm up with a little bit of olive oil.
I build my sandwich by spreading a layer of wasabi mayo on the inside of each piece of sourdough bread. Then I add a healthy layer of spicy mustard to each side. Next I line one side with sliced red onion followed by 4 slices of roast beef. I finish off the sandwich with two slices of sharp cheddar cheese - on each side closest to the bread.
After the sandwich is finished and the pan is thoroughly warmed, I spread butter on the side of the sandwich that will go facedown on the pan first. I follow the butter with salt and garlic powder. While the sandwich is cooking on one side, I repeat these steps to the other. I allow the sandwich to cook until the inside is warmed through and the cheese begins to melt.
I finish the preparations by cutting the sandwich in half and serving on a dish with the tomato soup. This meal is perfect for a cool October evening with some fun Halloween tunes in the background.
