SIMPLE BREAKFAST QUICHE

Quiche is one of my all-time favorite breakfast foods. The best part about a quiche is how easy it is to make. Sometimes I even make it the day before, then only have to warm it in the oven the next morning. Here’s my go-to recipe for putting together a killer quiche.

INGREDIENTS

  • 1 pre-made pie crust

  • 8 large eggs

  • ¾ teaspoon salt

  • ¼ teaspoon pepper

  • 4oz Trader Joes Diced Pancetta Italian Style Cured Bacon

  • 1 ½ cup shredded cheese

  • 3 tablespoons green onions

DIRECTIONS

  • Preheat oven to 375˚.

  • Cook pancetta in frying pan over med-high heat.

  • Unroll pie crust into pie pan and spread cooked pancetta, 1 cup of cheese, and green onions across crust.

  • Mix eggs, salt, pepper together in large bowl.

  • Pour egg mixture into pan.

  • Top with remaining cheese.

  • Cook for 35-40 minutes.

  • Let set for 10 minutes before serving.

Note: When reheating, I will put this back in the oven preheated to 350˚ for about 8-10 minutes or until warmed through.
