SAVORY FLANK STEAK PINWHEELS
I love steaks! And I'm always trying new ways to prepare them. This recipe offers a rich and savory flavor with an Italian flair. These pinwheels (a variation of a recipe I received from my friend, Caitlin) are incredibly easy to make and are sure to become a staple dish in your home.
INGREDIENTS
- 1 Whole Flank Steak
- 2 Garlic Cloves (Minced)
- 4 Scallions (Chopped)
- 4 Ounces of Boars Head Peppered Salami (Sliced Thin and Quartered)
- 8 Ounces of Italian Fontina (Cubed)
- 8 Ounces of Sautéed Portobella Mushrooms (Sliced)
- 1/2 Cup freshly grated Parmigiano-Reggiano
- 1/2 Cup of Bread Crumbs
- 1/4 Cup of Olive Oil
- Rosemary Sprigs
- Salt
- Pepper
INSTRUCTIONS
- Lay steak on a flat surface and trim any excess fat.
- Preheat Oven to 450.
- Use a sharp knife to cut down the middle of the steak using the butterfly method.
- Add Garlic, Scallions, Salami, Cheeses, Bread Crumbs, Mushrooms, and Olive Oil into a mixing bowl - stirring with spoon or by tossing by hand.
- Season inside of steak with salt and pepper.
- Spread stuffing mixture across the steak evenly, leaving 1/4 inch space to the edge of the steak.
- Roll up steak.
- Take 4 pieces of bakers twine and tie steak together.
- Place on a cooking pan and bake for 15-20 minutes.
- Let sit for 5 minutes and serve.
