Whether you are having people over for lunch or wanting a simple yet tasty sandwich during the week, this egg salad recipe won't disappoint! 

This recipe makes 7 sandwiches - if you don't need that many, you can simply cut the amounts in half.

INGREDIENTS

  • 16 Eggs
  • 3/4 Cup of Real Mayonnaise
  • 3 Teaspoons of Spicy Brown Mustard
  • 1/2 Cup of Chopped Green Onions
  • 3 Teaspoons of Sweet Relish
  • 1/2 teaspoon of Paprika
  • Salt and Pepper to taste
  • White Bread

INSTRUCTIONS

  1. Put all eggs into a pan and cover the eggs with cold water. Bring the water to a boil for about 3 minutes, then remove from the heat. Put a lid on the pan and keep the eggs in the hot water for about 8 minutes. 
  2. Drain the hot water from the pan and cover the eggs with cool water. Immediately peel the eggs and place to the side.
  3. In a separate bowl, stir together other ingredients: mayonnaise, mustard, green onions, relish, paprika, and salt and pepper. 
  4. Chop your eggs into small pieces and mix the eggs in with the mixture. Taste to ensure there is enough seasoning. 
  5. Spread the egg salad mixture over 7 sandwiches. (White bread is my favorite with egg salad.)
  6. For a lovely presentation, cut the crust off around the edges, and cut the sandwiches into triangles.
