DELICIOUS CHICKEN SALAD

As the weather gets warmer and summer inches closer, I want to eat all the foods that make it feel like it’s already here. Chicken salad is a refreshing light summer meal. It also happens to be one of my most favorites. It’s such an easy dish to put together. It tastes a lot better the second day - so I like to prep this the night before, if possible. Let me know what you think when you try it.

INGREDIENTS:

  • 2 1/2 cups diced cooked chicken

  • 1 cup finely chopped celery

  • 1 cup halved seedless grapes

  • 1 cup chopped walnuts

  • 1 cup diced apples

  • 3/4 cup mayonnaise

  • 1/4 cup brown mustard

  • 1 minced sweet onion

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/2 teaspoon paprika

DIRECTIONS:

  • In a large bowl, combine all ingredients thoroughly. 

  • Cover with plastic wrap and place in the refrigerator to chill overnight.

  • Serve on bread or in a wrap. This recipe also goes well as a side dish served with crackers or pita chips. 

*Feel free to add more seasonings or mayo to get the taste you prefer.
