SCRUMPTIOUS SALMON STROGANOFF
Here is a recipe that's both easy and tasty. I love salmon and enjoy a good beef stroganoff. So what could be better than combining two great things?! (This does not always work - see here ) But seriously, if you're looking for a meal that's quick and easy, but tastes like you spent a lot of time on it, this recipe is for you!
INGREDIENTS
1 lb fresh salmon, cubed
8 oz sliced mushrooms (you can add more if you want to)
3 tbsp salted butter
2 cloves garlic, chopped
16 oz heavy whipping cream
1/2 cup fresh parmesan cheese
2 tbsp chives, chopped
1 tsp basil
1 tsp oregano
1/2 tsp salt
1/2 tsp pepper
1 box of farfalle noodles
INSTRUCTIONS
In a large pot, begin boiling water for noodles (follow instructions on the box for al dente noodles).
Warm a large frying pan on medium/high heat, melt 3 tbsp of butter and cook the garlic.
Once the butter begins to melt, add the mushrooms - cook the mushrooms until they absorb the butter and become soft and spongy.
Add in heavy whipping cream and increase the heat to high.
Once the cream begins to boil, reduce the heat to medium, add parmesan cheese and other seasonings, and stir.
Once all of the ingredients are combined, add the salmon and cook covered for 3-5 minutes.
Salmon will appear a pinkish white when finished. Remove a piece of the salmon and check to make sure it is fully cooked.
Combine salmon mixture with noodles in a large bowl and top with chives.
Serve and enjoy!
