SCRUMPTIOUS SALMON STROGANOFF

Here is a recipe that's both easy and tasty. I love salmon and enjoy a good beef stroganoff. So what could be better than combining two great things?! (This does not always work - see here ) But seriously, if you're looking for a meal that's quick and easy, but tastes like you spent a lot of time on it, this recipe is for you!

INGREDIENTS

  • 1 lb fresh salmon, cubed

  • 8 oz sliced mushrooms (you can add more if you want to)

  • 3 tbsp salted butter

  • 2 cloves garlic, chopped

  • 16 oz heavy whipping cream

  • 1/2 cup fresh parmesan cheese

  • 2 tbsp chives, chopped

  • 1 tsp basil

  • 1 tsp oregano

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 box of farfalle noodles

INSTRUCTIONS

  • In a large pot, begin boiling water for noodles (follow instructions on the box for al dente noodles).

  • Warm a large frying pan on medium/high heat, melt 3 tbsp of butter and cook the garlic.

  • Once the butter begins to melt, add the mushrooms - cook the mushrooms until they absorb the butter and become soft and spongy.

  • Add in heavy whipping cream and increase the heat to high.

  • Once the cream begins to boil, reduce the heat to medium, add parmesan cheese and other seasonings, and stir.

  • Once all of the ingredients are combined, add the salmon and cook covered for 3-5 minutes.

  • Salmon will appear a pinkish white when finished. Remove a piece of the salmon and check to make sure it is fully cooked.

  • Combine salmon mixture with noodles in a large bowl and top with chives.

  • Serve and enjoy!
